Speed:
When deciding if you need a standard or high speed blender you need to look at how you intend to use it. For normal blending operation the standard model is usually adequate for your operation, but if it is going to be in a high volume setting or require fine consistant finished products such as smoothies the high speed model is what you need.

Size:
The restaurant blender container size will depend on the size of operation and the frequency of usage you will need. Models range in sizes offered from one quart to one gallon. Power for these units range as well, from 1/2hp – 3hp motors are available. The 1/2hp – 1hp motors are fine for most operations, but again if you have a situation where you feel the volume will be on the high side go with the larger motor.. Larger operations should go with at least a ½ gal container with a 1hp – 2hp motor.

Container:
The construction of the containers is available in either stainless steel, glass or polycarbonate. While stainless steel is longest lasting the other two offer a nicer merchandising addition. With that the case the polycarbonate is the most popular because it's lightweight and less breakable than glass. I recommend purchasing a second container if you go this route as they will get cloudy over time and can possibly break or crack.
